Salsa and Guacamole

Ingredients

Part 1

  • 6 whole Beefsteak Tomatoes
  • 2 medium Red Onion
  • 1 medium Red Pepper
  • 1 medium Yellow Pepper
  • 1 medium Green Pepper

Part 2

  • 2 cloves Garlic
  • 1 medium Jalapeno Chilli
  • 1 small bunch Coriander
  • 125ml Olive Oil
  • 50ml White Wine Vinegar
  • 3-4 Crushed Cumin Seeds
  • 1x250ml jar Passata
  • Salt & Fresh Milled Black Pepper
     

Method

  • Deseed Beefsteak tomatoes
  • Chop all ingredients in part1 into 10mm dice
  • Place all ingredients in part 2 into a food mixer and blend to a smooth paste/sauce
  • Mix together and refrigerate until needed, allow to reach room temperature before use

Chef's Cooking Tip

  • Add lime juice to lift the flavour
  • Experiment with salsa ingredients, add corn niblets or fruits

Chef's Serving Suggestion

  • Serve as a dipping sauce for Findus French Bread Pizza
