Prawn Skewers

Ingredients
- 8 large King Prawns, cooked shelled
- Bamboo Skewers
Marinade
- 1 x 15ml spoon Palm Sugar
- 125ml Soy sauce (kecap manis)
- 90ml Rice Vinegar
- 125ml Mirin or alternatively white sherry
- 25gm Rice Flour
- 2 cloves Garlic (fine dice)
- 2 Finely shredded lime leaves
- Sprinkle Sesame Seeds
- Fresh red chilli peppers
Method
To make the marinade
- Soak the bamboo skewers in water for 24 hours
- Mix the ingredients in a shallow dish
- Thread the Prawns onto the skewers in a overlapping fashion.
- Place the skewers into the sauce and let marinate in the refrigerator at least 2 hours, although overnight is preferable.
To cook skewers
- Prepare moderate-hot charcoal coals or preheat a frying pan
- Cook the skewered prawns, turning several times and basting with the marinade, until crispy on the outside but still moist on the inside, about 4 minutes.
- Sprinkle skewers with lime leaf fine strips and garnish with sesame seeds.
Chef's Cooking Tip
- When using fresh chillies take care, use gloves, when tasting if it starts to burn too much squeeze on fresh lime to reduce the heat.
