Potato Salad

Ingredients
- 250gm New Potatoes
- 3 x Medium Whole Eggs
- 3 x Smoked Bacon Rashers (rindless)
- ½ peeled Red Onion (fine diced)
- 150ml Mayonnaise
- Small bunch Flat Leaf Parsley
- Salt & Fresh Milled Black Pepper
Method
- Place 2 heavy based pans full of water on the stove to boil
- Add to 1 halved New potatoes and cook until tender, drain and allow to coolIn the other hard boil the eggs, cool and peel, cut into quarters
- Grill the smoked bacon rashers, until crispy and golden, cut into rough pieces and allow to cool
- Fine chop the red onion and flat leaf parsley
- Gently fold all the ingredients together and serve
Chef's Cooking Tip
- Add a few spoonfuls of liquid smoke essence or bbq sauce to the mayoniasse to add the extra zing
