Potato Salad

Ingredients

  • 250gm New Potatoes
  • 3 x Medium Whole Eggs
  • 3 x Smoked Bacon Rashers (rindless)
  • ½ peeled Red Onion (fine diced)
  • 150ml Mayonnaise
  • Small bunch Flat Leaf Parsley
  • Salt & Fresh Milled Black Pepper

Method

  • Place 2 heavy based pans full of water on the stove to boil
  • Add to 1 halved New potatoes and cook until tender, drain and allow to coolIn the other hard boil the eggs, cool and peel, cut into quarters
  • Grill the smoked bacon rashers, until crispy and golden, cut into rough pieces and allow to cool
  • Fine chop the red onion and flat leaf parsley
  • Gently fold all the ingredients together and serve

Chef's Cooking Tip

  • Add a few spoonfuls of liquid smoke essence or bbq sauce to the mayoniasse to add the extra zing
