Ingredients

  • 500g pack Findus Wok Chinese vegetables
  • 1tbsp vegetable oil
  • 50g no-soak dried apricots, finely chopped
  • 50g toasted flaked almonds
  • 2tsp ground cinnamon
  • 2tbsp coriander, roughly chopped
  • Salt and freshly ground black pepper
  • 200g pack filo pastry
  • 100g melted butter

Method

  • Place 3 heavy based pan with water on the stove and boil.
  • Quarter Cherry Tomatoes, drizzle with olive oil and season with salt & pepper
  • In 1 pan, cook egg noodles for 3 minutes and drain, toss in olive oil
  • Pan fry Salmon Fillets until just cooked and set aside to cool, then gently flake.
  • In pan 2, cook Fresh Peas in boiling water for 3 minutes, refresh in ice cold water
  • In 3rd pan , cook Fresh Asparagus in boiling water for 1 ½ minutes, refresh in ice cold water
  • Zest lemon rind and squeeze ½ lemon over salmon
  • Warm a shallow pan and add all ingredients, toss through and season to taste, top with parmesan shavings

Chef's Cooking Tip

  • Add some fresh birds eye chilli last minute to really spice it up.
