Coleslaw

Ingredients
- 1 head White Cabbage
- 1 medium White Onion
- 1 large Carrot
- 200ml Mayonnaise
- Salt & Fresh Milled Black Pepper
Method
- Remove outer leaves of white cabbage
- Quarter cabbage and remove stalk, place on side and fine shred into thin strips, place in a bowl and sprinkle with salt and sugar, leave for 1 hour
- After 1 hour, you will see liquid that has been drawn out from cabbage, drain off
- Peel and finely shred white onionPeel and finely grate carrot
- Mix all ingredients together
- Season
Chef's Cooking Tip
- For a lighter coleslaw mix with crème fraiche and serve immediately
- Try adding a small pinch of curry powder to your coleslaw
