Chicken Satay

Ingredients
- 6 breast Chicken (boned, skinned and cut into 20mm wide strips)
Marinade
- 1 x 15ml spoon Palm Sugar
- 2 x 15ml spoon Crunchy peanut butter
- 125ml Soy sauce (kecap manis)
- 125ml Lime juice (freshly squeezed)
- 1 stick Lemongrass (bruised and fine diced)
- 2 cloves Garlic (fine dice)
- Crushed dried chile peppers
Peanut Sauce
- 125gm Crunchy peanut butter
- 200ml Coconut milk, unsweetened
- 125ml Lime juice (freshly squeezed)
- 2 x15ml spoon Soy sauce
- 2 x15ml spoon Palm Sugar
- 1 ts Fresh ginger root, grated
- 4 cloves Garlic (fine dice)
- 1 stick Lemongrass
Thai fish sauce
- Ground Black Pepper
- Grated lime zest
- Fresh coriander sprigs
- Coriander Oil (optional)
- Double Cream (optional)
Method
To make the marinade
- Soak the bamboo skewers in water for 24 hours
- Mix the ingredients in a shallow dish
- Thread the chicken strips onto the skewers in a serpentine fashion.
- Place the skewers into the sauce and let marinate in the refrigerator at least 2 hours, although overnight is preferable.
To make the peanut sauce
- Combine all the ingredients (apart from lime zest and coriander) in a saucepan.Season to taste with fish sauce and pepper.
- Cook over moderate heat, stirring constantly, until the sauce is as thick for about 15 minutes.
- Transfer to a food processor or blender and puree.
- Maybe add a little cream and coriander oil and blend until smooth, for a smoother dip.
To Cook Satays
- Prepare moderate-hot charcoal coals or preheat a frying pan
- Cook the skewered chicken, turning several times and basting with the marinade, until crispy on the outside but still moist on the inside, about 8 minutes.
- Sprinkle grilled chicken with lime zest and garnish with coriander leaves.
- Serve with the peanut sauce for dipping.
Chef's Cooking Tip
- The peanut sauce can be made several hours ahead and stored in the refrigerator
- Bring to room temperature before serving.
