Caesar Salad

Ingredients

  • 2 x Cloves Garlic
  • 4 x Anchovy Filets
  • 2 x Egg Yolks
  • 1 x 15ml spoon Dijon Mustard
  • 100ml Red Wine Vinegar
  • 200ml Olive Oil
  • 200ml Vegetable Oil
  • 1 x Lemon juice of
  • 100gm Parmesan Cheese
  • Large Croutons

To serve

2 Heads Cos lettuce leaves, washed & torn in large pieces

Method

  • Puree garlic cloves and anchovy filets.
  • Whisk egg yolks, mustard, vinegar, olive oil and vegetable oil, then whisk until emulsified.
  • Add pureed garlic and anchovy to mixture, squeeze in fresh lemon juice and freshly grated Parmesan.
  • Serve with crisp Cos lettuce leaves

Chef's Cooking Tip

  • Use a large un-treated Oak bowl to mix the salad and season the bowl by rubbing it with garlic before use.
