Beef Skewers

Ingredients
- 250gm Good Lean Beef Sirloin, cut into 20mm wide strips
Marinade
- 125gm Sunflower Oil
- 1 clove Garlic crushed
- 25gm Galangal fine dice (Part of the ginger family, fresh or dried)
- 1 stick Lemongrass fine dice
Dipping Sauce
- 3 x 15ml spoon Clear honey
- 1 x Lime, juice only
- ½ small Red bird's-eye chilli, finely chopped
- ½ Green bird's-eye chilli, finely chopped
Method
To make the Marinade
- Soak the bamboo skewers in water for 24 hours
- Mix the ingredients in a shallow dish
- Thread the beef strips onto the skewers in a serpentine fashion.
- Place the skewers into the sauce and let marinate in the refrigerator at least 2 hours, although overnight is preferable.
To make the Dipping Sauce
- Mix the ingredients together in a small pan and bring to the boil
To Cook Skewers
- Prepare moderate-hot charcoal coals or preheat a frying pan
- Cook the skewered beef, turning several times and basting with the marinade, until crispy on the outside but still moist on the inside, about 8 minutes.
- Spoon over beef skewers with dipping sauce and garnish with coriander leaves.
- Serve with the sweet chilli sauce for dipping.
Chef's Cooking Tip
- The dipping sauce can be made several hours ahead and stored in the refrigerator
- Bring to room temperature before serving.
