Beef Skewers

Ingredients

  • 250gm Good Lean Beef Sirloin, cut into 20mm wide strips

Marinade

  • 125gm Sunflower Oil
  • 1 clove Garlic crushed
  • 25gm Galangal fine dice (Part of the ginger family, fresh or dried)
  • 1 stick Lemongrass fine dice

Dipping Sauce

  • 3 x 15ml spoon Clear honey
  • 1 x Lime, juice only
  • ½ small Red bird's-eye chilli, finely chopped
  • ½ Green bird's-eye chilli, finely chopped

Method

To make the Marinade

  • Soak the bamboo skewers in water for 24 hours
  • Mix the ingredients in a shallow dish
  • Thread the beef strips onto the skewers in a serpentine fashion.
  • Place the skewers into the sauce and let marinate in the refrigerator at least 2 hours, although overnight is preferable.

To make the Dipping Sauce

  • Mix the ingredients together in a small pan and bring to the boil 

To Cook Skewers

  • Prepare moderate-hot charcoal coals or preheat a frying pan
  • Cook the skewered beef, turning several times and basting with the marinade, until crispy on the outside but still moist on the inside, about 8 minutes.
  • Spoon over beef skewers with dipping sauce and garnish with coriander leaves.
  • Serve with the sweet chilli sauce for dipping.

Chef's Cooking Tip

  • The dipping sauce can be made several hours ahead and stored in the refrigerator
  • Bring to room temperature before serving.
